Italian Sausage Pasta

A savory pasta with sausage, onions, and herbs


Ingredients
  • 4 quarts water
  • 2 tablespoons olive oil
  • 1 pound Italian sausage
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup dry white wine (optional)
  • 1/2 cup sun-dried tomatoes
  • 1 tablespoon fresh oregano, or 1 teaspoon dry
  • 1 pound pasta of your choice
  • grated Parmesan, as garnish
Steps
  • Step 1Bring water to a boil
  • Step 2 Heat olive oil in a skillet
  • Step 3 Remove sausage from the casings, crumble into skillet, and brown
  • Step 4 Set aside sausage, then brown onion and garlic
  • Step 5 Add wine (or water), then the sun-dried tomatoes, drained and chopped
  • Step 6 Add sausage and oregano
  • Step 7 Cook pasta, then toss with the sauce and top with Parmesan
